Roughhouse Brewing
Roughhouse Brewing is a family-run brewery established back in January of 2019. They create oak-fermented, American farmhouse beer on their ranch. Their American farmhouse beer perfectly complements the Texas backdrop — dry, crisp, and refreshing.
The owners’ drive to do meaningful work brought them closer to one another, to their land and, to the community. The brewery and taproom are housed in a wooden barn with a homey aesthetic. They offer a range of beer, guest wine, and cider.
Their yeast-centric ales undergo 100% fermentation in American White Oak feeders using their house, mixed culture including yeast harvested from the Pasternak Ranch. The brewery’s water is supplied by our on-site well tapping into the Cow Creek section of the Trinity aquifer, which provides some of the highest quality water in Central Texas.

Middleton Brewing
Middleton Brewing is a 10-barrel brewpub that specializes in small-batch, handcrafted Belgian, American, and British Ales perfectly suited for the Texas Hill Country. Kim and Dennis Middleton founded the brewery in the summer of 2011. It has been one of the most outstanding local breweries in Texas ever since.
With the dream of opening a brewpub where people could enjoy a wide array of quality brews while enjoying all the natural grandeur of the Hill Country, the couple moved to Texas from California. Middleton Brewing strives to provide the community with a world-class beer in an inviting and laid-back atmosphere.
Middleton Brewing produces an extensive collection of beers including 7 Belgian-style beers, 5 American-style beers, and 2 British brews alongside a wide array of wine and locally-made cider.

Darkside Fermentation - Root Cellar Cafe
Producing a range of locally sourced Belgian-style brews, Darkside Fermentation is located in the storage room of The Root Cellar Cafe. Back in May 2009, Silas Parker (brewer and owner) approached Kyle Mylius (The Root Cellar’s owner) to sell Darkside beer in the cafe.
They offer Darkside’s flagship beer, Mark of the Yeast: 78666, which Parker himself referred to as a “dark medieval ale”. This beer is nourishing and the finish lingers. Other beers in the Darkside lineup include the draught beers BrideAle and GroomsBeer, Weiz Guy, Golden Mean, Pale Rider (a Belgian pale ale), and a lot of seasonal flavors — all brewed in-house!

AquaBrew
The AquaBrew is a brewery, beer garden, restaurant, and events center located in downtown San Marcos. AquaBrew is one of the most sought-after local breweries in Texas. It is a spot where craft beer, culinary delights, local music, and community come together as one!
AquaBrew’s events center can accommodate up to 500 people. Its rooftop bar and patio have bench-style seating that gives you a casual and friendly vibe — perfect for taking in the Texas air. They have about 10 varieties on tap with a couple of featured guest breweries. In addition, growlers and crowlers are available for purchase if you want to take home your favorite brew!
