Kale (What wine goes well with kale?) needs no introduction. This powerhouse of nutrients has vitamins, minerals, and even cancer fighting antioxidants that very few foods are known to contain. Taking all this goodness of kale to the next level is K’s Kitchen. Karen Fagan is the strength behind this home brand of kale chips.

The Beginning of K’s Kitchen

It all began when Karen took part in a fundraiser for her church. She got home made kale chips, acai bowls and fresh juices (how long do fresh juices last?) to raise money for the church. What was supposed to be a 2-week deal quickly turned into 2 months and word of Karen’s delicious and healthy kale chips quickly spread beyond the church.

The Beginning of K’s Kitchen

With encouragement from friends and coworkers, Karen decided to sell her products at the local Elgin farmer’s market and the rest, as they say is history.

Kale chips at K’s Kitchen are made to order, so you will always get the freshest bag each time. They are light, crunchy and well-seasoned. Unlike some brands of kale chips, K’s Kitchen kale chips are not weighed down with heavy nut coating, so you get more kale in your bag! They also come in a variety of flavors; Sweet Heat, Cilantro Lime Jalapeno, Garlic Parmesan, Spicy, Spicy Parmesan and coming soon..QUESO!

Apart from the best seller kale chips, Karen also offers granolas (how long does granola last?) in two combos- Orange Pecan and Nut & Seed Mix. The granola is perfect with ice cream, oatmeal or so good even by itself. If you are craving something sweet, nutty, and chocolatey, the Nutty Chocolate Bites are a must-try! There are frozen mango and acai bowls too and frequently you will even find Cilantro Lime Jalapeno Kale salads.

One more reason to buy K’s Kitchen products is that 10% of the profits go to the Church Within Christian Ministry Food Pantry.

Learning Steps While Setting Up K’s Kitchen

K’s Kitchen really is built from scratch by Karen. She is the one behind creating all the products in batches each time, labelling, packaging, marketing, and delivery.

Karen says she has had to discipline herself into not overspending on supplies. Another challenge was making the kale in batches, producing tasty new treats.

Next up on Karen’s to-do list is adding a Nutritional Information page on her website.

Challenges Faced Due to the Pandemic

Due to COVID-19 the SOCO Farmers and Makers Market, (where K’s Kitchen had its set up), has been closed, which has affected the sales by 90%. For now, Karen wants to build a strong online presence. To aid with the business, there is a Support page on the website for those who would like to leave a donation.
