The colder weather is the perfect opportunity to make your diet a bit richer and a bit less healthy. As long as you don’t overdo it, it’s perfectly fine for your diet has these seasonal changes. It makes it more interesting and in the long run it’s good for you. These cheesy recipes are all cheese (how long does cheese last?)oriented but there’s still a lot of diversity within that and you get to make them in different quantities and for different meals depending on your needs and preferences.

Scalloped Potatoes With Cheddar Cheese

It’s a rather simple meal and it will keep you full so it might not be best served for dinner or if it served latter in the day it should be served during the holidays and when your sleep patterns aren’t that important.  The recipe doesn’t call for any meat but you could some ham or crumbled bacon if you want to.

  • Preheat the oven to 375 F/190 C/Gas 5. Butter a 2-quart baking dish.

  • Layer about one-third of the potatoes (What wine goes well with potatoes?) in the prepared baking dish.

  • In a cup or small bowl, combine the flour (how long does flour last?) with the salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of one-third of the potatoes and the flour mixture and top with remaining potato slices. Dot with butter and then pour the hot milk over the potatoes.

  • Cover the baking dish with a lid or foil and bake for 45 minutes, or until the potatoes are just tender. Remove the cover or foil and sprinkle the shredded cheese over the top of the potatoes.

  • Return the potatoes to the oven and bake, uncovered, for an additional 15 minutes, or until the potatoes are tender and cheese has melted.

Fried Chicken And Waffle Grilled Cheese

If you want a full and rich snack that you can grab from the plate but that’s still quite tasty and filled with creamy cheese these is the one for you. This is usually a popular breakfast food since it will keep you full for the rest of the day until you get back home and to your daily routine.

  • Once your frozen waffles thaw to room temp, add half of your cheese onto one of the waffles. Chop your fried chicken into bite-size nuggets and then place on top. Add hot sauce (how long does hot sauce last?) and honey, adding more or less depending on your taste. Add the remaining cheese and finish by placing the other waffle on top.

  • In a cast iron skillet, add 1 pat of butter and melt until butter develops little bubbles. Add sandwich and cook for a few minutes until the waffle becomes crisp and golden – then flip. Cook for a few minutes on the other side until all the cheese has melted and the outside of the sandwich is crispy.

  • Remove from heat and let sit for one minute. While it’s sitting, mix equal parts hot sauce with equal parts honey and serve alongside sandwich. Enjoy!

Cheddar Bacon Puffs

These cheddar puffs are light and airy but they carry a lot of flavor since that’s what the bacon (how long does bacon last?) adds to the mix once it’s hot. They are also more filling that you might think and they are great for a party or a small gathering.

  • Line two baking sheets with parchment paper or silicone baking mats. Set aside.

  • Preheat the oven to 400 F.

  • In a medium saucepan, combine the water, milk or light cream, salt, and butter. Put over high heat and cook, stirring, until butter is melted. Bring to a boil.

  • With a wooden spoon, stir in the flour all at once. Continue stirring until the dough leaves the sides of the pan and forms a ball.

  • Transfer the hot dough to a large mixing bowl or the bowl of a stand mixer with paddle attachment. Let the dough rest for 2 minutes.

  • Beat the hot dough on low speed for 1 minute. Quickly beat in the first egg, beating until thoroughly blended into the dough. Continue beating in the remaining eggs, one at a time, beating well after each addition.

  • Beat in the shredded cheese, bacon, cayenne, and freshly ground black pepper. Continue beating until the dough is smooth and well blended.

  • Using a tablespoon measure or small cookie scoop, drop the dough onto the parchment lined baking sheets. With moistened fingers, smooth any peaks on top of the mounds of dough. If peaks are left, they tend to over-brown or burn.

  • Bake the puffs for about 20 to 22 minutes, until nicely puffed and golden brown.
