Finding gluten free options for tortillas has always been a struggle. But with increasing dietary restrictions among people, the demand has also risen, and we are able to see an abundance of gluten free and paleo diet options. If you are like me, exploring new gluten free options can be an adventure.

Lots of GF flour (how long does flour last?) combinations are available when it comes to making gluten free grain free tortillas, but not all will give you deliciously soft and pliable tortillas.

After some trial and errors, some mixing of various gluten free flours and ingredients, I was able to make some wonderfully tasting, supple tortillas.

One root veggie that's been getting a lot of attention recently is the versatile- Cassava. While its popularity is newly obtained , it has been used in its native regions for herbalism purposes for centuries.

The two flours that I did perfect this recipe with were Oats (how long do oats last?) and Cassava root. Both combine to make nut free and gluten free tortillas.

While oat flour (how long does oat flour last?) is obtained simply by grinding regular rolled oats (how long do rolled oats last?), you can find cassava root flour in most of your grocery stores.

Benefits of Oat Flour

  • Highly rich in manganese, phosphorus, magnesium, vitamin B1 and vitamin B5.

  • Great source of carbon fiber. Oats contain beta glucans which are fiber that reduce cholesterol.

  • Whole oats have antioxidants and polyphenols, a unique kind of antioxidant, avenanthramides are almost uniquely found in oats.

  • Avenanthramides help lower blood pressure levels with the production of nitric oxide. Nitric oxide gas dilates blood vessels and leads to improved blood flow.

Benefits of Cassava Root Flour

  • A calorie- rich vegetable, rich in thiamine, niacin and vitamin C

  • Belongs to the family of resistant starches, which promote good health by nurturing good gut bacteria.

  • Cassava root flour can be used as an alternative in gluten free baking.

  • Tapioca pearls, made from processing cassava root are a good go-to-meals for infants having bouts of diarrhea, being light on their stomachs and devoid of dairy, wheat, or grains.

To Make These Tortillas, You Will Need:

For Making Healthy Gluten Free Oat and Cassava Flour Tortillas, You Will Have To:

  1. Mix all the dry ingredients together.

  2. Pour in the coconut milk and make a dough

  3. Add the water slowly while working the dough till it comes together as nice and soft.

  4. Divide the dough into 8 uniformly sized balls

  5. Place a ball between two parchment paper sheets or silicone mats and roll into a medium thickness tortilla.

  6. Meanwhile, heat a cast iron skillet on medium to high.

  7. Gently pick the tortilla and place on the skillet.

  8. Cook on both sides till golden brown and slather some ghee (how long does ghee last?) butter on one side.

  9. Enjoy after it cools, as it is softer at room temperature.

Helpful Tips!

  1. If the tortilla doesn't come off the parchment paper, place it along with the paper onto the skillet. you can then easily peel it off in about a minute or two!

  2. If your tortilla doesn’t come out perfectly round, use a lid or a springform pan frame to make them perfectly round!

  3. If you want to keep your tortillas warm, get a tortilla warmer, they do their job well and they make for great serving vessels on the table!

  4. If you love tortillas, then it's worth investing in a tortilla press. They're built to last forever and they're under $25!
