To freeze, place uncooked patties onto a baking tray, within layers of plastic or foil wrap. Cover and freeze until patties are hard. Then transfer them to a freezer-safe zipper bag, put a date label on the bag, and store. When required, defrost the patties and fry or bake them at 325°F for 10 minutes.

The key to a good breakfast sausage is high-quality ground pork. With good quality meat, even if you freeze and reheat, the sausage patties will be juicy and tender.

Once the oil is hot, place 3 to 4 patties in the skillet and fry for 2 to 3 minutes, flip and cook again for 2 to 3 minutes or till the patty is nicely browned on both sides. Transfer patties onto a serving plate and serve with eggs, tortilla, or any other bread of choice.

Breakfast Sausage Recipe

Succulently juicy patties flavored with a warm, pungent mix of herbs and spices.

Ingredients

  • 1 tablespoon chopped fresh sage leaves
  • 2 teaspoons chopped fresh thyme leaves
  • 1 teaspoon fennel seeds, crushed
  • 1/2 teaspoon crushed red pepper flakes, optional
  • 1/8 teaspoon ground nutmeg
  • Kosher salt and freshly ground black pepper, to taste
  • 1 1/2 pounds ground pork
  • 3 slices (uncooked) bacon, diced
  • 2 tablespoons maple syrup, optional
  • 1 tablespoon canola oil

Instructions

  1. In a small bowl, combine sage, thyme, fennel seeds, red pepper flakes, nutmeg, 1 1/2 teaspoons salt and 1 teaspoon pepper.
  2. In a large bowl, combine pork, bacon, maple syrup and spice mix. Be careful not to overmix.
  3. Shape the patties. Scoop out 1/4 cup (about 2 ounces) of pork mixture and flatten to create 2 1/2- to 3-inch wide patties.
  4. In a large skillet, heat oil over medium heat. Cook sausage patties until browned, about 2-3 minutes per side.
Notes
  1. Uncooked sausage patties can be frozen between sheets of parchment paper for up to 1 month. Cook over medium low heat, turning often, until browned and cooked through, about 10 minutes. Do not thaw.
