  1. Take your chicken out of the fridge and season it with salt and pepper ahead of time, meanwhile, preheat the oven to 400°F.
  2. Place an ovenproof skillet onto the stove over medium-high heat. Add olive oil to the hot pan then place in the chicken skin side down. That skin should be nice and crispy so don't disturb it for at least 5 minutes.
  3. While the skin sears start adding your mushrooms. Add a tablespoon or more of olive oil if you need.
  4. Flip the chicken breasts and sear the other sides for 3-4 minutes on each side. By that time you should have added all your mushrooms.
  5. Place the skillet into the oven for 10-15 minutes or until the internal temperature reaches 160°F.
  6. Take the skillet out of the oven. Remove the chicken and tent it with some foil over the tent. This makes sure the chicken stays moist.
  7. Meanwhile turn the stove back on with the mushrooms. Cook the mushrooms for a few minutes to get the moisture out of them for a more intense mushroom flavor.
